Unplanned Cooking: Quick and Easy Breakfast Wraps

Sometimes there's mornings you want something awesome for breakfast, but don't want to spend lots of time making it, and don't want to go somewhere else to get it. Here's a quick idea for an easy, quick and filling breakfast wrap.

This took about 20 minutes to do, was completely unplanned, but ended up tasting quite satisfying for thrown together breakfast. I wish I had some bacon about to add in as well.

  • Start with a pain with some hot oil in it, turned up about half way.
  • Add some pre-cut hashbrowns (or have some pre-cut from the night before - this is meant to be quick!)
  • You'll need a tortilla shell or two, perhaps a Lebanese or Greek pita would do nicely as well
  • Throw some cheese in the mix - I had 2 slices of processed cheese left, I would have preferred Havarti or something else with more zing to it
  • Slice up your veggie of choice, or wait and add some salsa after everything's together
  • Scramble in a couple of eggs, either right in with the hashbrowns (which should be mostly done by now) or separately, as I did
  • Arrange everything on the tortilla, and you can throw something interesting on top like ranch or blue cheese dressing

Enjoy it open face or wrap it up and take it on the road!
